
Curry Chicken Salad
2 1/2 C Chicken, chopped
3/4 C Mayonnaise
1 1/2 T Curry Powder
2 ribs of Celery, chopped
Dried Fruit - optional (golden raisins or dried cranberries)
Nuts - optional (sliced almonds, walnuts or pecans)
Combine all ingredients. I use about a handful of the fruit and nuts. Serve over salad greens, or on a bread of your choice.
